Collagen Cauliflower Rice  

• Level: Easy
• Time: 15 minutes
• Makes: 4-6 servings 

This is a really simple, keto-friendly recipe that tastes amazing and provides antioxidants, healthy fats and essential amino acids. Enjoy as a side dish or sprinkle with fresh herbs for a quick and healthy lunch.  

Ingredients

• 1 head of cauliflower  
• 1-2 cloves garlic
• 2 tbsp butter or ghee (or use coconut oil for a dairy-free option)
• 2-3 tbsp Great Lakes Gelatin – Collagen Hydrolysate  

Instructions:  

1. Wash and thoroughly dry your cauliflower and chop it into large chunks, removing the leaves and the stalk.   

2. Use a food processor to blitz the cauli chunks into rice. You can also do this using a box grater to grate it into rice-sized morsels. 

3. Finely chop the garlic, and sauté with the cauli rice in a large skillet over medium heat with the butter or ghee for 7-8 mins. Season well.  

Before you serve, stir in the collagen, aiming for 1 tbsp per serve.  

Sprinkle with herbs and a drizzle of Brain Octane Oil or extra virgin olive oil.

*Some recipes call for the extra moisture to be squeezed out when making cauliflower rice, but this isn’t usually needed if you use a large skillet in step 4.
